Description
Sweet, tangy, and savory, this one pan honey lemon chicken asparagus is fast, fresh, and full of flavor.
Ingredients
4 boneless, skinless chicken thighs or breasts
Salt and pepper, to taste
1/3 cup honey
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon olive oil
2 tablespoons fresh lemon juice
Zest of 1 lemon
3 cloves garlic, minced
1 bunch asparagus, ends trimmed
Lemon slices for garnish (optional)
Instructions
To get started, season your chicken with salt and pepper on both sides. In a small bowl, whisk together the honey, soy sauce, lemon juice, lemon zest, and minced garlic. This will serve as your flavor-packed glaze.
Heat olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken. Cook the chicken for about 4–5 minutes per side, or until it’s golden and nearly cooked through. You’ll want to get a nice sear for flavor and texture.
Next, pour the honey lemon glaze over the chicken in the skillet. Turn the heat to medium and let the sauce simmer, turning the chicken occasionally to coat it evenly. As it simmers, the sauce will reduce and thicken slightly into a sticky glaze that clings to the chicken.
Now, move the chicken to one side of the skillet and add the asparagus. If needed, drizzle a bit more oil over the asparagus and season lightly with salt. Cook the asparagus for about 3–5 minutes, turning occasionally, until it’s bright green and just tender. Continue spooning sauce over the chicken as everything finishes cooking.
Finally, garnish with fresh lemon slices for a pop of color and serve the dish straight from the skillet. It’s as beautiful as it is tasty, and no extra pans mean easy cleanup.
Notes
Swap chicken thighs with chicken breasts or even tenderloins.
Use maple syrup or agave in place of honey for a slightly different sweetness.
Add chili flakes or a splash of hot sauce if you like a kick of heat.
Toss in sliced bell peppers or zucchini for extra vegetables.
Replace asparagus with green beans or broccoli if desired.
