White Chocolate Raspberry Tiramisu – A Luxurious No-Bake Dessert

Ingredients

  • 8 oz mascarpone cheese
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 6 oz white chocolate (melted and slightly cooled)
  • 24 ladyfinger cookies
  • ½ cup raspberry preserves
  • ¼ cup water
  • 2 cups fresh raspberries

Instructions

Step 1: Prepare the Cream Mixture

In a large mixing bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract using an electric mixer. Mix until smooth and fluffy. Gently fold in the melted white chocolate, ensuring everything is well combined.

Step 2: Make the Raspberry Syrup

In a small saucepan, heat the raspberry preserves with ¼ cup of water, stirring until smooth. Remove from heat and let it cool slightly.

Step 3: Soak the Ladyfingers

Dip each ladyfinger briefly into the raspberry syrup, ensuring they absorb just enough moisture without becoming soggy.

Step 4: Assemble the Layers

Arrange half of the soaked ladyfingers in the bottom of an 8×8-inch dish. Spread half of the white chocolate mascarpone mixture over the top. Add a layer of fresh raspberries, then repeat the process with the remaining ladyfingers and cream mixture.

Step 5: Chill the Tiramisu

Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to develop.

Step 6: Garnish and Serve

 

Before serving, sprinkle white chocolate shavings on top and garnish with additional fresh raspberries. Slice and enjoy!
