A stunning white chocolate raspberry dream cake layered with fluffy vanilla-almond sponge, luscious raspberry filling, and whipped white chocolate cream. Perfect for birthdays, holidays, or any special occasion where elegance and flavor matter most.
Ingredients
For the cake layers:
2 1/2 cups (310g) all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
1 cup (226g) unsalted butter, softened
1 3/4 cups (350g) granulated sugar
4 large eggs
1 tsp vanilla extract
1/2 tsp almond extract
1 cup (240ml) whole milk
For the raspberry filling:
2 cups (250g) fresh or frozen raspberries
1/3 cup (65g) granulated sugar
1 tbsp lemon juice
1 tbsp cornstarch + 1 tbsp water (slurry)
For the white chocolate frosting:
1 1/2 cups (360ml) heavy cream
8 oz (226g) white chocolate, chopped
1 tsp vanilla extract
Optional for decoration:
Fresh raspberries
White chocolate curls or shavings
Instructions
Preheat & Prep: Preheat oven to 350°F (175°C). Grease and line 2 or 3 round 8- or 9-inch cake pans with parchment paper.
Make the Batter: In a bowl, whisk flour, baking powder, and salt. In another large bowl, cream butter and sugar until light. Add eggs one at a time, beating well. Mix in vanilla and almond extract. Alternate adding dry ingredients and milk, beginning and ending with flour. Mix until just combined.
Bake: Divide batter evenly between pans and smooth the tops. Bake 25–30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes, then transfer to wire racks.
Make Raspberry Filling: In a saucepan, simmer raspberries, sugar, and lemon juice. Stir in cornstarch slurry and cook until thickened. Let cool completely.
Make White Chocolate Frosting: Heat cream until steaming. Pour over chopped white chocolate. Let sit 1 minute, then stir until smooth. Chill 1 hour, then whip with vanilla until fluffy.
Assemble Cake: Layer cakes with raspberry filling and whipped white chocolate frosting. Cover cake with remaining frosting and decorate as desired.
Serve or Chill: Chill slightly before slicing. Serve at room temperature for best flavor.
Notes
Cake layers can be made ahead and frozen.
Ensure all components are cool before assembling to prevent sliding.
