Ingredients
Tortilla Wraps & Spread:
4 large flour tortillas (10-inch, soft and fresh)
8 oz cream cheese, softened
1 tbsp ranch seasoning mix (or homemade herb blend)
Vegetable Filling:
½ cup finely chopped red bell pepper
½ cup finely chopped carrots
½ cup finely chopped cucumber (seeds removed)
½ cup finely chopped green onions
½ cup finely chopped baby spinach
Salt and black pepper, to taste
Instructions
In a mixing bowl, combine the softened cream cheese and ranch seasoning until smooth.
Add the chopped bell pepper, carrots, cucumber, green onion, and spinach. Mix until evenly incorporated.
Lay a tortilla flat and spread a generous layer of the vegetable cream cheese mixture to the edges.
Roll the tortilla tightly into a log. Repeat with the remaining tortillas.
Wrap each roll in plastic wrap and refrigerate for 30 minutes to firm.
Unwrap, then slice into ½ to 1-inch pinwheels using a sharp serrated knife.
Serve chilled or at room temperature.
