Instructions

  1. Preheat the Oven: Start by preheating your oven to 400°F.
  2. Prepare the Potatoes: Scrub the russet potatoes clean, rub them with a thin layer of canola oil, and bake for 40 minutes, until they are soft enough to slice through.
  3. Cook the Bacon: Cook the bacon in a large pan over low heat, flipping occasionally until evenly cooked. Crumble the bacon once cooled.
  4. Prepare the Potatoes for Mashing: Once the potatoes are cool enough, peel two potatoes and cut them into thirds. Leave the skins on two potatoes and cut them as well.
  5. Mash the Potatoes: Add the crumbled bacon, butter, sour cream, cheddar cheese, seasoned salt, salt, and pepper. Mash until smooth.
  6. Add the Milk: Gradually add the milk, adjusting until you reach your desired consistency.
  7. Assemble and Bake: Transfer the mashed potatoes into a greased 9 x 13-inch baking dish. Top with reserved crumbled bacon and shredded cheddar cheese. Bake for 20-25 minutes until golden and bubbly.
