Instructions
- Preheat oven: Set oven to 375°F. Line a baking sheet with parchment paper and lightly spray with nonstick spray.
- Soak the stuffing: In a large bowl, combine 3 cups of stuffing mix with 2 cups of turkey stock. Stir gently and let it soak until softened.
- Sauté aromatics: Melt butter in a pan over medium heat. Add onion, celery, garlic, and Bell’s Seasoning. Sauté 5–7 minutes until fragrant. Cool slightly.
- Make stuffing crumbs: Pulse remaining 1 cup of dry stuffing in a food processor to create fine crumbs.
- Mix the meatloaf: Combine soaked stuffing, ground turkey, eggs, salt, pepper, sautéed vegetables, and stuffing crumbs. Mix gently until combined—don’t overmix.
- Shape and bake: Transfer to prepared sheet tray, shape into a smooth loaf, and bake 55–60 minutes or until internal temp reaches 155°F.
- Rest and serve: Tent with foil and rest 15 minutes before slicing. Serve with homemade gravy and optional cranberry sauce.
- Make the gravy: While the meatloaf rests, melt butter in a small saucepan. Whisk in flour to form a roux; cook 2–3 minutes. Slowly whisk in hot stock and browning sauce until thickened. Serve over meatloaf.
