  • Author: Elisa
  • Total Time: 3 hours
  • Yield: 8 slices 1x
  • Diet: Vegetarian

Description

This Strawberry Pop Tart Pie combines nostalgic toaster pastry vibes with the richness of a real strawberry pie. Flaky crust, a thick homemade strawberry filling, sweet vanilla glaze, and rainbow sprinkles make it an eye-catching, crowd-pleasing dessert.

Ingredients

Scale

Pie Ingredients:

  • 5 cups strawberries, sliced
  • ½ cup sugar
  • Pinch of salt
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • Non-stick spray
  • 1 package Pillsbury pie crust (2 crusts total)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/8 teaspoon vanilla extract
  • Sprinkles

Instructions

  1. Make the Filling: Add sliced strawberries, sugar, and salt to a saucepan. Let sit 15 minutes. Simmer over medium heat for 15 minutes.
  2. Thicken: Mix cornstarch and water to create a slurry. Stir into the berries and cook 5 more minutes until thickened. Let cool for 10 minutes.
  3. Preheat Oven: Preheat to 375°F. Spray pie dish or skillet with non-stick spray.
  4. Assemble Pie: Line dish with one pie crust. Add cooled strawberry filling. Top with second crust, crimp edges with a fork, and cut a small “X” in the center.
  5. Bake: Bake for 30–40 minutes until golden and bubbling. Cool completely for at least 2 hours.
  6. Glaze: Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled pie and add sprinkles. Let glaze set before slicing.

Notes

  • Filling must cool: Warm filling will melt the crust and prevent proper thickening.
  • Don’t skip the cornstarch slurry: Ensures a sliceable filling.
  • Customize: Use mixed berries, add lemon zest, or drizzle chocolate instead of glaze.
  • Serving tip: Pair with ice cream or whipped cream for an indulgent touch.
  • Storage: Refrigerate up to 4 days. Best served at room temperature or slightly warm.
