Ingredients
2 cups (about 300g) cooked, shredded chicken
1 cup (about 200g) cooked rice (white or Spanish-style)
1 can (15 oz or 425g) refried beans or whole black beans, drained
1 ½ cups (170g) shredded Mexican blend cheese
1 cup (about 100g) shredded lettuce
1 cup (150g) diced tomatoes
½ cup (120g) sour cream or guacamole
6–8 large flour tortillas (10-inch size)
Optional additions: sliced jalapeños, salsa, chopped cilantro, hot sauce
Instructions
First, prepare all your ingredients and set up an assembly line. Start by cooking and shredding the chicken if you have not already done so. Warm the cooked rice and the beans separately in small saucepans over medium heat until heated through. If you like, you can season the rice with a little lime juice, cumin, or chopped cilantro to boost the flavor even more.
Next, warm the flour tortillas. You can do this by placing them one at a time in a dry skillet over medium heat for about 30 seconds per side until soft and pliable. Alternatively, you can wrap a stack of tortillas in foil and warm them in a 350°F (175°C) oven for about 10 minutes.
