Description

This Seafood Pot Pie is creamy, rich, and packed with shrimp, fish, and a flaky golden crust! A comforting and easy seafood dinner!


Ingredients

For the Filling:

  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon Old Bay seasoning (or Cajun seasoning)
  • 2 tablespoons all-purpose flour
  • 1 cup (240ml) seafood or chicken broth
  • ½ cup (120ml) heavy cream
  • ½ cup frozen peas
  • ½ cup diced carrots
  • ½ cup corn (optional)
  • 1 cup shrimp, peeled and deveined
  • 1 cup white fish (such as cod or tilapia), cut into bite-sized pieces
  • ½ cup crab meat (optional)

For the Crust:

  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

1. Preheat & Prepare

  1. Preheat oven to 400°F (200°C).
  2. Grease a 9×9-inch baking dish or pie dish.

2. Cook the Seafood & Vegetables

  1. In a large skillet, melt butter over medium heat.
  2. Add onions and garlic, cooking for 2-3 minutes until fragrant.
  3. Stir in salt, black pepper, and Old Bay seasoning.
  4. Add flour, stirring for 1 minute to create a roux.

3. Make the Creamy Sauce

  1. Gradually whisk in seafood broth and heavy cream, stirring until smooth.
  2. Add peas, carrots, and corn, simmering for 2-3 minutes until slightly thickened.
  3. Stir in shrimp, fish, and crab, cooking for 2 minutes (don’t overcook).

4. Assemble the Pot Pie

  1. Pour the creamy seafood mixture into the prepared baking dish.
  2. Roll out the puff pastry and place it over the top, trimming any excess.
  3. Brush the pastry with beaten egg for a golden finish.

5. Bake Until Golden & Bubbly

  1. Bake for 20-25 minutes, or until the crust is golden brown and crispy.
  2. Let cool for 5 minutes before serving.

6. Serve & Enjoy!

 

  1. Garnish with fresh parsley or a squeeze of lemon juice.
  2. Serve warm with a side salad or roasted vegetables.

Notes

Use fresh seafood – It enhances flavor and texture.
Don’t overcook the seafood – It will finish cooking in the oven.
Let the pie rest – This helps the sauce thicken before serving.
