  • 10 fully cooked breakfast sausage links

  • 2 large eggs

  • ¼ cup milk

  • 1 teaspoon vanilla extract

  • 2 tablespoons granulated sugar (for cinnamon sugar)

  • 2 tablespoons butter (for frying)

  • Optional: maple syrup or powdered sugar for serving


Instructions

Start by preparing the bread. Trim the crusts off each slice and use a rolling pin to flatten them slightly. This makes the bread easier to roll and gives the finished roll ups a nice compact shape. Next, place one cooked sausage link near the edge of each flattened bread slice, then roll it up tightly like a cigar. Set them aside seam-side down while you prepare the custard.

In a medium bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined. This mixture will coat each roll up and give it that rich French toast flavor. Preheat your skillet over medium heat and add a tablespoon of butter, allowing it to melt and coat the surface.

Dip each sausage roll up into the egg mixture, making sure all sides are coated. Let any excess drip off before placing them in the hot pan seam-side down. Cook in batches if necessary, turning gently to brown each side evenly. It should take about 2–3 minutes per side. Add more butter to the pan as needed between batches.

 

While the roll ups are still warm, roll them in a cinnamon sugar mixture or sprinkle it over the top. Alternatively, serve them plain with a dusting of powdered sugar or a drizzle of maple syrup. Either way, they’re ready to enjoy immediately and are best served warm and fresh from the skillet.

This makes it difficult to roll and can cause the roll ups to crack or fall apart in the pan. Opt for soft, fresh sandwich bread for best results.

Over-soaking the roll ups in the egg mixture is also a common pitfall. Too much custard can make the bread soggy, especially once it hits the skillet. Just a quick dip and shake off the excess before frying.
