  • Author: Elisa
  • Total Time: 50 minutes
  • Yield: 4 servings 1x

Description

This sausage green bean potato casserole combines smoky sausage, tender potatoes, and fresh green beans in a rich, savory casserole that’s perfect for family dinners and meal prepping. One-pan comfort food that’s easy to make and full of flavor.

Ingredients

Scale

For the Casserole:

  • 1 lb smoked sausage, sliced into rounds (turkey sausage works for a lighter version)
  • 4 cups baby potatoes, halved or quartered
  • 2 cups fresh green beans, trimmed and cut into 2-inch pieces
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Preheat the Oven: Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Prepare the Vegetables: Wash and halve the baby potatoes. Trim and cut the green beans into 2-inch pieces.
  3. Sauté the Sausage: Heat olive oil in a large skillet over medium heat. Add sausage and cook for 4-5 minutes until browned. Set aside.
  4. Prepare the Casserole: In the same skillet, add potatoes and cook for 5-7 minutes until browned. Add green beans, garlic powder, paprika, onion powder, salt, and pepper. Stir and cook for 2 more minutes.
  5. Assemble the Casserole: Combine sausage, potatoes, and green beans in the baking dish. If using, sprinkle cheddar cheese on top.
  6. Bake the Casserole: Cover with foil and bake for 30-35 minutes. Remove foil and bake for another 10 minutes until potatoes are tender and casserole is golden brown.
  7. Serve: Let cool slightly before serving.

Notes

  • Use different sausages: Swap smoked sausage for turkey sausage, kielbasa, or chicken sausage for a different flavor.
  • Add more vegetables: Feel free to add bell peppers, carrots, or corn for extra color and flavor.
  • Make it cheesy: Top with mozzarella, mozzarella, or Parmesan for extra richness.
  • Spicy version: Add red pepper flakes or hot sauce to bring the heat to this casserole.
