  • Yield: 6 servings 1x

Description

Sausage, Egg, and Cheese Breakfast Roll-Ups are the perfect grab-and-go breakfast. Combining savory sausage, scrambled eggs, and melty cheese wrapped in a soft tortilla, these roll-ups are the ideal solution for busy mornings. Customizable and easy to prepare, they’re a protein-packed meal that’s perfect for meal prep and quick breakfasts.

Ingredients

Scale

For the Roll-Ups:

  • 6 large eggs
  • 1/2 lb breakfast sausage (or turkey sausage for a lighter option)
  • 1 cup shredded cheddar cheese (or your preferred cheese)
  • 6 flour tortillas (medium or large size)
  • Salt and pepper, to taste
  • 1 tablespoon butter (or oil, for cooking)

Optional Add-ins:

  • 1/4 cup diced bell peppers or onions
  • Hot sauce or salsa (for a spicy kick)
  • Spinach or mushrooms (for added veggies)

Instructions

  1. Cook the Sausage: Brown the sausage in a skillet over medium heat, breaking it apart with a spoon. Remove and set aside.
  2. Scramble the Eggs: In the same skillet, melt butter and scramble the eggs until fully cooked. Season with salt and pepper to taste.
  3. Assemble the Roll-Ups: Place a tortilla on a clean surface. Add scrambled eggs, cooked sausage, and shredded cheese. Add veggies or hot sauce if desired.
  4. Roll and Cook: Fold in the sides of the tortilla and roll tightly. Optionally, toast in the skillet for 1-2 minutes for a crispy exterior.
  5. Serve: Serve immediately or store in the fridge for meal prep.

Notes

  • Customization: Add sautéed spinach, mushrooms, or bell peppers for extra flavor.
  • Protein Options: Swap sausage for turkey sausage, bacon, or plant-based protein.
  • Cheese Variations: Use mozzarella, Swiss, or pepper jack cheese for a different flavor.
  • Spicy Kick: Add hot sauce or jalapeños for some heat.
  • Storage: Store in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
