This sauerkraut casserole with ground beef is the ultimate comfort food, bringing together the tangy flavor of sauerkraut and the hearty richness of seasoned beef.   • 1 lb ground beef

  • 2 tablespoons olive oil

  • 1 medium onion, finely chopped

  • 2 garlic cloves, minced

  • 2 cups sauerkraut, drained and rinsed

  • 1 cup shredded mozzarella cheese

  • 1 cup sour cream

  • 1 teaspoon caraway seeds (optional but traditional)

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • ½ cup shredded cheddar cheese (for topping)


Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  • Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until soft, about 4–5 minutes. Add minced garlic and cook for another minute.

  • Brown the Ground Beef: Add ground beef to the skillet and cook until browned. Drain excess fat and season with salt, pepper, paprika, and caraway seeds. Stir and set aside.

  • Layer the Casserole: In the prepared baking dish, spread the drained sauerkraut evenly. Layer the cooked beef mixture on top. Spoon sour cream over the beef and spread gently.

  • Add Cheese: Sprinkle mozzarella cheese evenly over the sour cream. Add cheddar cheese on top.

  • Bake: Cover the dish with foil and bake for 20 minutes. Remove foil and bake an additional 10–15 minutes, or until the top is golden and bubbly.

 

  • Rest and Serve: Let the casserole rest for 5–10 minutes before serving. Garnish with parsley or chives, if desired.

Notes

For extra creaminess, mix a few tablespoons of cream cheese into the sour cream layer.

If you don’t like caraway seeds, you can omit them or use fennel seeds.
