This sauerkraut casserole with ground beef is the ultimate comfort food, bringing together the tangy flavor of sauerkraut and the hearty richness of seasoned beef. Layered with creamy cheese and baked to golden perfection, this dish is easy to prepare and perfect for a cozy family meal or potluck.
Ingredients
1 lb ground beef
2 tablespoons olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
2 cups sauerkraut, drained and rinsed
1 cup shredded mozzarella cheese
1 cup sour cream
1 teaspoon caraway seeds (optional but traditional)
1 teaspoon paprika
Salt and pepper to taste
½ cup shredded cheddar cheese (for topping)
Instructions
Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until soft, about 4–5 minutes. Add minced garlic and cook for another minute.
Brown the Ground Beef: Add ground beef to the skillet and cook until browned. Drain excess fat and season with salt, pepper, paprika, and caraway seeds. Stir and set aside.
Layer the Casserole: In the prepared baking dish, spread the drained sauerkraut evenly. Layer the cooked beef mixture on top. Spoon sour cream over the beef and spread gently.
Add Cheese: Sprinkle mozzarella cheese evenly over the sour cream. Add cheddar cheese on top.
Bake: Cover the dish with foil and bake for 20 minutes. Remove foil and bake an additional 10–15 minutes, or until the top is golden and bubbly.
Rest and Serve: Let the casserole rest for 5–10 minutes before serving. Garnish with parsley or chives, if desired.
Notes
For extra creaminess, mix a few tablespoons of cream cheese into the sour cream layer.
If you don’t like caraway seeds, you can omit them or use fennel seeds.
