Description

These Rice Krispie Chocolate Chip Cookies are crispy, chewy, and packed with chocolatey goodness! A fun twist on classic cookies.

For the Cookie Dough:

  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ½ cups (315g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups (4 cups) Rice Krispies cereal
  • 1 ½ cups (270g) semi-sweet chocolate chips

Instructions

1. Preheat & Prep

  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.

2. Make the Cookie Dough

  1. In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  2. Add eggs and vanilla extract, mixing until combined.
  3. In a separate bowl, whisk together flour, baking soda, and salt.
  4. Gradually mix dry ingredients into the wet ingredients until a soft dough forms.

3. Fold in the Add-Ins

  1. Gently fold in Rice Krispies cereal and chocolate chips, mixing until evenly distributed.

4. Scoop & Bake

  1. Using a cookie scoop or spoon, drop dough onto the prepared baking sheet, spacing cookies 2 inches apart.
  2. Bake for 10-12 minutes, or until golden brown on the edges but still soft in the center.
  3. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use room temperature butter – Helps create the perfect chewy texture.
Don’t overmix the dough – Mix just until combined to keep cookies soft.
For extra crunch, add ½ cup chopped nuts like pecans or walnuts.
