This easy soft flatbread (no yeast) recipe is ready in minutes—perfectly fluffy, simple, and incredibly versatile.


Ingredients

  • 2 cups all-purpose flour (plus extra for dusting)

  • 1 ½ teaspoons baking powder

  • ¾ teaspoon salt

  • ¾ cup plain yogurt (preferably full fat)

  • 2 tablespoons olive oil (plus more for cooking)


Instructions

  • In a large bowl, mix the flour, baking powder, and salt together. Make a well in the center.

  • Add the yogurt and olive oil to the well, then stir with a spoon or your hands until a shaggy dough forms.

  • Knead the dough gently for about 1–2 minutes until it becomes smooth and soft. If it feels too sticky, add a little more flour.

  • Divide the dough into 6–8 equal pieces and roll each one into a ball.

  • Flatten each ball with your hands, then use a rolling pin to roll them out into thin circles or ovals, about ⅛ to ¼ inch thick.

  • Preheat a dry skillet over medium-high heat. Brush lightly with olive oil if desired.

  • Cook each flatbread for 1–2 minutes per side until bubbles form and the surface becomes golden and slightly charred.

 

  • Remove and keep warm, covering with a clean towel while you cook the remaining dough.

Notes

  • Using cold yogurt can slow down the dough’s hydration. Room temperature works best.

  • Adding too much flour while kneading can lead to tough, dry flatbread.

  • Overcooking on high heat will make them hard instead of soft and bendable.
