Description

Pizza Enchiladas are a quick, cheesy, and family-friendly dinner combining all your favorite pizza flavors rolled up in soft tortillas, baked with melty mozzarella and rich pizza sauce. Perfect for busy weeknights or casual gatherings!

Ingredients

Scale
  • 6 flour tortillas (soft taco size)
  • 2 cups shredded mozzarella cheese, divided
  • 8 ounces pizza sauce, divided
  • 1 teaspoon garlic salt (optional)
  • Pizza toppings of choice, such as:
    • Sliced pepperoni
    • Cooked sausage
    • Sautéed mushrooms
    • Diced bell peppers
    • Black olives
    • Red onion
    • Spinach

Instructions

  1. Preheat: Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish. Spread half the pizza sauce over the bottom and sprinkle with garlic salt if desired.
  2. Assemble: Place a tortilla on a flat surface. Add mozzarella and desired toppings in the center. Roll and place seam-side down in the prepared baking dish. Repeat with all tortillas.
  3. Top: Pour remaining pizza sauce evenly over the rolled tortillas and sprinkle with the remaining mozzarella cheese.
  4. Bake: Bake uncovered for 15–20 minutes, until cheese is melted and bubbly. Optional: broil for 2–3 minutes for a golden top.
  5. Serve: Let rest for 5 minutes, then garnish with fresh basil or parsley. Serve warm with a side salad or dipping sauce.

Notes

  • Don’t overfill the tortillas to prevent tearing.
  • Use quality pizza sauce for best flavor.
  • Pre-cook meats and veggies to remove moisture before adding.
  • Storage: Refrigerate leftovers for up to 3 days or freeze for up to 2 months.
  • Variations: Try Alfredo or pesto sauce for a fun twist.
