This quick and flavorful pepper steak with onions is a classic homemade Chinese recipe featuring tender beef, colorful bell peppers, and onions in a rich, savory sauce. It’s easy to make, better than takeout, and perfect for weeknight dinners or meal prep.
Ingredients
For the beef and vegetables:
1 lb flank steak or sirloin, thinly sliced against the grain
2 tablespoons soy sauce (for marinating)
1 tablespoon cornstarch
2 tablespoons vegetable oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 large onion, cut into wedges
3 garlic cloves, minced
1 teaspoon fresh ginger, minced
For the sauce:
¼ cup soy sauce
2 tablespoons oyster sauce
1 tablespoon hoisin sauce (optional)
1 tablespoon rice vinegar
1 tablespoon brown sugar
½ cup beef broth or water
1 teaspoon freshly ground black pepper
1 teaspoon sesame oil
1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
Instructions
In a bowl, combine sliced steak with 2 tablespoons soy sauce and 1 tablespoon cornstarch. Marinate for 10–15 minutes.
In another bowl, whisk together all sauce ingredients except the slurry. Set aside.
Heat 1 tablespoon oil in a wok or large skillet over high heat. Sear the beef for 1–2 minutes per side. Remove and set aside.
Add the remaining oil, garlic, and ginger. Sauté for 30 seconds.
Add bell peppers and onion. Stir-fry for 3–4 minutes until just tender.
Return beef to the pan and pour in the sauce. Stir and simmer for 2–3 minutes.
Add slurry if thicker sauce is desired. Stir until thickened.
Serve hot over rice, noodles, or in lettuce wraps.
