Description

This quick and flavorful pepper steak with onions is a classic homemade Chinese recipe featuring tender beef, colorful bell peppers, and onions in a rich, savory sauce. It’s easy to make, better than takeout, and perfect for weeknight dinners or meal prep.

Ingredients

Scale

For the beef and vegetables:

  • 1 lb flank steak or sirloin, thinly sliced against the grain

  • 2 tablespoons soy sauce (for marinating)

  • 1 tablespoon cornstarch

  • 2 tablespoons vegetable oil

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 large onion, cut into wedges

  • 3 garlic cloves, minced

  • 1 teaspoon fresh ginger, minced

For the sauce:

  • ¼ cup soy sauce

  • 2 tablespoons oyster sauce

  • 1 tablespoon hoisin sauce (optional)

  • 1 tablespoon rice vinegar

  • 1 tablespoon brown sugar

  • ½ cup beef broth or water

  • 1 teaspoon freshly ground black pepper

  • 1 teaspoon sesame oil

  • 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)

Instructions

  • In a bowl, combine sliced steak with 2 tablespoons soy sauce and 1 tablespoon cornstarch. Marinate for 10–15 minutes.

  • In another bowl, whisk together all sauce ingredients except the slurry. Set aside.

  • Heat 1 tablespoon oil in a wok or large skillet over high heat. Sear the beef for 1–2 minutes per side. Remove and set aside.

  • Add the remaining oil, garlic, and ginger. Sauté for 30 seconds.

  • Add bell peppers and onion. Stir-fry for 3–4 minutes until just tender.

  • Return beef to the pan and pour in the sauce. Stir and simmer for 2–3 minutes.

  • Add slurry if thicker sauce is desired. Stir until thickened.

  • Serve hot over rice, noodles, or in lettuce wraps.

Notes

Slice beef thinly against the grain for tenderness.

Don’t skip marinating—it enhances flavor and texture.

Prep all ingredients in advance; stir-frying goes quickly.

Customize the heat with chili flakes or chili oil.

Store leftovers up to 4 days and reheat in a skillet for best texture.
