  • 1 jar (24 oz) red pasta sauce or marinara
  • 1/4 tsp red pepper flakes
  • 1/4 tsp salt (adjust to taste)
  • 1/4 tsp ground black pepper
  • 1/4 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 7 cups beef or chicken broth
  • 910 uncooked lasagna noodles, broken into pieces
  • 3 cups fresh baby spinach
  • 1/2 cup shredded parmesan cheese
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Brown the meats: In a large Dutch oven, cook ground beef and sausage over medium-high heat until browned, about 8–10 minutes. Drain excess fat and set aside.
  2. Sauté aromatics: Add onion (and olive oil if needed) to the pot. Cook 5 minutes until softened. Add garlic and cook 30 seconds until fragrant.
  3. Build the flavor base: Stir in tomato paste and cook for 1 minute to deepen flavor. Add red pepper flakes, salt, pepper, garlic powder, oregano, and thyme. Mix well.
  4. Add liquids: Pour in pasta sauce and broth. Return the browned meat to the pot and bring to a simmer.
  5. Cook noodles: Add broken lasagna noodles. Simmer 20 minutes, stirring occasionally, until noodles are tender.
  6. Finish the soup: Stir in spinach and cook 1 minute until wilted. Add parmesan and stir to combine.
  7. Serve: In a bowl, mix ricotta and mozzarella. Ladle soup into bowls and top with a dollop of the cheese mixture. Enjoy warm!
