Description

This Mushroom Swiss Cheese Meatloaf is juicy, cheesy, and full of flavor! A hearty and delicious comfort food meal the whole family will love.

For the Meatloaf:

  • 1 ½ lbs (680g) ground beef (80/20 blend for best texture)
  • ½ cup breadcrumbs (plain or seasoned)
  • ½ cup whole milk
  • 1 egg, lightly beaten
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 cup Swiss cheese, shredded

For the Mushroom Filling:

  • 1 tablespoon butter
  • 1 cup mushrooms, finely chopped (button, cremini, or portobello)
  • 1 teaspoon minced garlic
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

For the Glaze:

  • ¼ cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon brown sugar

For Garnishing (Optional):

  • Fresh parsley, chopped
  • Extra Swiss cheese, melted on top

Instructions

1. Prepare the Mushroom Filling

  1. Melt butter in a skillet over medium heat.
  2. Add chopped mushrooms and sauté for 5 minutes, until softened.
  3. Stir in garlic, salt, and black pepper; cook for 1 minute.
  4. Remove from heat and let cool slightly.

2. Make the Meatloaf Mixture

  1. In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, Worcestershire sauce, salt, black pepper, garlic powder, onion powder, and parsley.
  2. Gently mix until just combined (avoid overmixing).
  3. Fold in shredded Swiss cheese.

3. Assemble the Meatloaf

  1. Preheat oven to 375°F (190°C).
  2. Line a loaf pan with parchment paper or lightly grease it.
  3. Press half of the meat mixture into the pan.
  4. Spread the sautéed mushrooms evenly over the top.
  5. Cover with the remaining meat mixture, sealing the edges.

4. Make the Glaze & Bake

  1. In a small bowl, mix ketchup, Dijon mustard, Worcestershire sauce, and brown sugar.
  2. Brush the glaze over the top of the meatloaf.
  3. Cover loosely with foil and bake for 45 minutes.
  4. Remove foil and bake uncovered for 15 more minutes, or until the internal temperature reaches 160°F (71°C).

5. Serve & Enjoy!

  • Let meatloaf rest for 10 minutes before slicing.
  • Garnish with extra Swiss cheese and fresh parsley.
  • Serve warm with your favorite sides!
