For the Meatloaf:
- 1 ½ lbs (680g) ground beef (80/20 blend for best texture)
- ½ cup breadcrumbs (plain or seasoned)
- ½ cup whole milk
- 1 egg, lightly beaten
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon dried parsley
- 1 cup Swiss cheese, shredded
For the Mushroom Filling:
- 1 tablespoon butter
- 1 cup mushrooms, finely chopped (button, cremini, or portobello)
- 1 teaspoon minced garlic
- ¼ teaspoon salt
- ¼ teaspoon black pepper
For the Glaze:
- ¼ cup ketchup
- 1 tablespoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 teaspoon brown sugar
For Garnishing (Optional):
- Fresh parsley, chopped
- Extra Swiss cheese, melted on top
Instructions
1. Prepare the Mushroom Filling
- Melt butter in a skillet over medium heat.
- Add chopped mushrooms and sauté for 5 minutes, until softened.
- Stir in garlic, salt, and black pepper; cook for 1 minute.
- Remove from heat and let cool slightly.
2. Make the Meatloaf Mixture
- In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, Worcestershire sauce, salt, black pepper, garlic powder, onion powder, and parsley.
- Gently mix until just combined (avoid overmixing).
- Fold in shredded Swiss cheese.
3. Assemble the Meatloaf
- Preheat oven to 375°F (190°C).
- Line a loaf pan with parchment paper or lightly grease it.
- Press half of the meat mixture into the pan.
- Spread the sautéed mushrooms evenly over the top.
- Cover with the remaining meat mixture, sealing the edges.
4. Make the Glaze & Bake
- In a small bowl, mix ketchup, Dijon mustard, Worcestershire sauce, and brown sugar.
- Brush the glaze over the top of the meatloaf.
- Cover loosely with foil and bake for 45 minutes.
- Remove foil and bake uncovered for 15 more minutes, or until the internal temperature reaches 160°F (71°C).
5. Serve & Enjoy!
- Let meatloaf rest for 10 minutes before slicing.
- Garnish with extra Swiss cheese and fresh parsley.
- Serve warm with your favorite sides!
