  • 1 teaspoon baking soda

  • ½ cup vegetable oil

  • 2 large eggs

  • 1 cup granulated sugar

  • 2 teaspoons vanilla extract

  • 2 cups diced fresh peaches (peeled)

  • ¼ cup sour cream (or plain yogurt)


Instructions

Start by preheating your oven to 350°F (175°C). Grease your loaf pan generously or line it with parchment paper to prevent sticking. In a large bowl, whisk together the flour, baking soda, salt, and cinnamon. Set this dry mixture aside.

In another bowl, beat the eggs lightly, then add the oil, sugar, and vanilla extract. Mix until smooth and slightly creamy. Fold in the sour cream, which will give the batter a luxurious texture.

Now, gradually combine the dry ingredients with the wet ingredients, mixing just until no streaks of flour remain. Be careful not to overmix, as this can make the loaf tough.

Once the batter is ready, gently fold in the diced peaches. Make sure the fruit is evenly distributed throughout the batter. Pour the mixture into your prepared loaf pan and smooth the top with a spatula.

Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. If the top starts to brown too quickly, cover it loosely with foil during the final 10–15 minutes of baking.

 

Remove the loaf from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Once cooled, slice and enjoy.

Notes

  • Overmixing the batter: This results in a dense, chewy texture instead of a soft, tender crumb.

  • Using underripe peaches: Ripe peaches bring natural sweetness and moisture. Choose peaches that give slightly when gently pressed.

  • Not greasing the pan properly: This can cause the loaf to stick and break when you remove it.
