1 lb (450g) ground chicken
1 cup (30g) fresh spinach, finely chopped
1/4 cup (25g) grated parmesan cheese or almond flour
1 large egg
2 cloves garlic, minced
1/4 cup (30g) finely chopped onion
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil (for greasing the pan)


Instructions

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or grease with olive oil.
In a large bowl, combine chicken, spinach, parmesan or almond flour, egg, garlic, onion, oregano, salt, and pepper.
Mix gently until well combined, being careful not to overwork the meat.
Form the mixture into 1 1/2-inch meatballs using a scoop or spoon. Place evenly spaced on the baking sheet.
Bake for 18–20 minutes or until golden and internal temperature reaches 165°F (74°C). Let rest for a few minutes and serve warm.

Notes

Use fresh spinach to avoid excess moisture.

Finely chop the onion for better texture and juiciness.

Do not overbake—check at 18 minutes for doneness.

Add red pepper flakes or lemon zest for a flavor boost.

Store in the fridge for up to 4 days or freeze for up to 3 months.
