Ingredients
For the Bread:
1 1/2 cups (190g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (115g) unsalted butter, softened
1 cup (200g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup (120ml) sour cream or Greek yogurt
Zest of 2 lemons
1/4 cup (60ml) fresh lemon juice
For the Cream Cheese Filling:
8 oz (225g) cream cheese, softened
1/3 cup (67g) granulated sugar
1 large egg
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat softened butter and sugar until light and fluffy (3-4 minutes).
Add eggs one at a time, then mix in vanilla extract, lemon zest, and lemon juice until combined.
Alternate adding the dry ingredients and sour cream to the butter mixture, starting and ending with dry ingredients. Mix just until combined.
In a separate bowl, beat together cream cheese, sugar, egg, and vanilla until smooth.
Pour half of the lemon batter into the prepared loaf pan. Spread cream cheese mixture evenly over batter, avoiding edges. Pour remaining batter on top and smooth the surface gently.
Bake for 50–60 minutes or until a toothpick inserted near the center comes out mostly clean. Cool in pan 10–15 minutes, then transfer to a wire rack to cool completely.
Notes
Use room temperature ingredients for best results. Do not overmix batter to keep bread tender.
Let bread cool completely before slicing for best texture.
Store wrapped tightly at room temperature up to 3 days, refrigerate up to 1 week, or freeze up to 3 months.
