Try this cheesy kielbasa rice and broccoli skillet—quick, easy, and perfect for family dinner. A one-pan casserole ready in 30 minutes.
Ingredients
For the skillet:
1 tablespoon olive oil
1 pound smoked kielbasa, sliced into ½-inch rounds
1 small onion, finely diced
2 cloves garlic, minced
1 cup long-grain white rice (uncooked)
2 cups chicken broth
2 cups broccoli florets (fresh or frozen)
1 ½ cups shredded cheddar cheese
½ cup milk
Salt and black pepper to taste
Optional for garnish:
Crushed red pepper flakes
Chopped parsley
Instructions
Heat olive oil in a large skillet over medium heat. Add sliced kielbasa and cook for 4–5 minutes until browned. Remove and set aside.
In the same skillet, sauté diced onion for 2–3 minutes until translucent. Add garlic and cook for 30 seconds.
Stir in uncooked rice and toast for 1–2 minutes.
Add chicken broth and bring to a boil. Reduce heat to low, add broccoli, cover, and simmer for 15 minutes until rice is tender.
Return cooked kielbasa to the skillet and stir to combine.
Stir in shredded cheddar and milk until melted and creamy. Season with salt, pepper, and red pepper flakes if using.
Garnish with parsley and serve hot.
Notes
Use frozen broccoli straight from the bag—no need to thaw beforehand.
To keep rice from getting mushy, be sure to simmer covered and avoid stirring too much once the liquid is added.
Swap kielbasa with cooked ground beef, turkey, or chicken for an easy variation.
Freshly shredded cheese melts more smoothly and gives the best flavor and texture.
Add a splash of broth or milk when reheating to restore creaminess.
