For the Filling:
- 8 oz cream cheese (regular or light cream cheese)
- 1/2 cup cooked bacon (or bacon bits)
- 2–3 jalapeno peppers, chopped (seeds in for more heat, or remove them for less heat)
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
For the Pinwheels:
- 4 large tortillas (10-inch burrito-size tortillas)
Instructions
- Prepare the Filling: Combine cream cheese, cooked bacon, jalapenos, cheddar cheese, and garlic powder in a large bowl. Mix until well combined.
- Spread the Mixture onto Tortillas: Lay the tortillas flat and evenly spread the filling onto each tortilla, covering it from edge to edge.
- Roll the Tortillas: Starting from one edge, tightly roll up each tortilla to ensure the filling stays inside.
- Chill the Pinwheels: Cover the rolled tortillas with plastic wrap or foil and refrigerate for at least an hour.
- Slice and Serve: After chilling, slice the pinwheels into 1-inch thick pieces and arrange them on a serving platter.
Notes
- Adjust the heat: For a milder version, remove the seeds from the jalapenos. For extra heat, leave the seeds in.
- Add veggies: Feel free to add finely chopped onions, bell peppers, or spinach for extra flavor.
- Make it cheesier: Add more cheese, like cream cheese or pepper jack, for a richer taste.
- Use different tortillas: Swap the tortillas for flour, spinach, or gluten-free tortillas for a different flavor and texture.
