  • 2 slices of whole grain, sourdough, or gluten-free bread (your choice)

  • ½ ripe avocado, mashed

  • 1 teaspoon lemon juice (to brighten the avocado)

  • A pinch of salt and black pepper

  • 2 slices of cheddar or mozzarella cheese (or a plant-based alternative)

  • 1 tablespoon butter or dairy-free spread (for grilling)


Instructions

  • Mash the avocado: Scoop the avocado into a bowl and mash it with a fork. Stir in the lemon juice, a pinch of salt, and freshly cracked pepper.

  • Assemble the sandwich: Lay out your bread slices. On one slice, spread the mashed avocado evenly. Add your cheese slices on top of the avocado. Cover with the second slice of bread.

  • Butter the outside: Spread butter on the outside of both slices of bread. This is what will create that iconic golden-brown crust.

  • Grill it: Heat your skillet over medium heat. Place the sandwich in the pan and cook for 3–4 minutes per side, or until the bread is crispy and the cheese has melted completely. Press gently with a spatula for even grilling.
