  • 4 Medium Bagels (plain or flavor of choice)

  • 4 Large Eggs

  • 75g / 2.5oz Cheddar Cheese, grated

  • 2 tbsp Heavy Cream

  • 50g / 1.75oz Cooked Bacon, chopped (or substitute with cooked chicken or turkey)

  • 1/2 Small Red Bell Pepper, finely diced

  • 1 Small Spring Onion, finely sliced

  • 1/4 tsp Garlic Powder

  • 1/4 tsp Onion Powder

  • Salt and Black Pepper, to taste

  • Butter, for greasing


Instructions

First, preheat your oven to 180°C/350°F. Then, carefully slice off the tops of your bagels and hollow out the inside, leaving a sturdy “wall” around the edges to hold the filling. Be sure not to puncture the bottom!

Next, butter the outside and inside of each bagel. Arrange them on a parchment-lined baking tray to make cleanup a breeze.

In a large mixing bowl, whisk together the eggs, heavy cream, garlic powder, onion powder, salt, and black pepper until well combined. Stir in the cheddar cheese, chopped bacon substitute, diced red bell pepper, and sliced spring onion.

Now, carefully pour the egg mixture into the hollowed bagels, filling them almost to the top. Make sure you distribute the fillings evenly across all the bagels.

 

Bake in the preheated oven for 15–20 minutes or until the eggs are fully set and the tops are golden brown. Allow the bagels to cool slightly before serving to avoid burns.

Notes

One of the most common mistakes is not hollowing out enough of the bagel. Without enough space inside, the filling can easily overflow, creating a messy situation.

Another mistake is overbaking. Since the bagel itself can dry out quickly in the oven, keeping a close eye on them during the last few minutes of baking is crucial.

 

Also, make sure to season the egg mixture well. Undersalting can result in bland stuffed bagels, and no one wants that!
