Instructions

  • Toast the bagels: Begin by slicing and lightly toasting your bagels. You can do this in a toaster, or if you prefer, on a hot skillet with a bit of butter for added crispness and flavor.

  • Cook the steak: Heat a skillet over medium-high heat and add half the butter or oil. Season the sliced steak with salt, pepper, garlic powder, and smoked paprika. Once the skillet is hot, cook the steak for 2–3 minutes per side or until browned and cooked to your desired doneness. Remove from the skillet and set aside.

  • Scramble the eggs: In a bowl, whisk the eggs with a pinch of salt and pepper. Lower the heat to medium and add the remaining butter to the same skillet. Pour in the eggs and scramble gently, cooking until just set and fluffy. Don’t overcook them—you want them soft and creamy.

  • Assemble the sandwich: Spread mayo or your favorite sauce on the cut side of the bagels if desired. On the bottom half of each bagel, layer half of the steak, then the scrambled eggs, then the cheese. Top with any optional toppings like sautéed onions or hot sauce.

  • Melt the cheese: Place the assembled halves back in the skillet or under a broiler for 1–2 minutes until the cheese melts and everything is warmed through. Then add the top half of the bagel and press gently.
