Ingredients

For the Cake:
2 large eggs
½ cup sugar
½ cup vegetable oil
½ cup plain yogurt
½ teaspoon vanilla extract
Juice and zest of 1 lime
1 cup all-purpose flour
1 teaspoon baking powder
Green food coloring (a few drops)

For the Frosting:
½ cup heavy cream
1 tablespoon powdered sugar
1 tablespoon lime juice
Zest of ½ lime (optional, for garnish)


Instructions

Preheat oven to 350°F (175°C). Line or grease an 8×8-inch cake pan.
In a mixing bowl, whisk eggs and sugar until light and fluffy.
Add oil, yogurt, vanilla, lime juice, and lime zest. Whisk to combine.
In a separate bowl, whisk flour and baking powder.
Add dry ingredients to wet, stirring gently until just combined.
Add green food coloring and mix until the color is evenly distributed.
Pour batter into prepared pan and smooth the top.
Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
Cool completely on a wire rack.
For the frosting, whip heavy cream with powdered sugar and lime juice until soft peaks form.
Frost the cooled cake and garnish with lime zest if desired.

Use room-temperature eggs and yogurt for best texture.

Zest the lime before juicing to avoid waste.

Do not overmix the batter to keep the cake light and fluffy.

For a more intense flavor, add a pinch of zest to the whipped cream.
