lbs boneless skinless chicken breasts, cut into 1½-inch chunks
½ cup grated Parmesan cheese
¼ cup unsalted butter, melted
1 tablespoon olive oil
3 cloves garlic, minced
1 teaspoon Italian seasoning
½ teaspoon paprika
½ teaspoon salt
½ teaspoon ground black pepper
Fresh parsley, chopped (optional)
Wooden or metal skewers


Instructions

Cut chicken into chunks and pat dry.
In a bowl, mix melted butter, olive oil, garlic, seasoning, paprika, salt, pepper, and Parmesan.
Add chicken and toss to coat. Marinate for 20–30 minutes.
Thread chicken onto skewers, spacing pieces slightly apart.
Preheat grill to medium-high. Grill skewers for 4–5 minutes per side, until chicken is 165°F and charred.
Garnish with parsley and extra Parmesan before serving.
