  • 2 tbsp olive oil

For the Filling:

  • ¼ cup (60g) unsalted butter, softened

  • 3 cloves garlic, minced

  • ½ cup (50g) grated parmesan cheese

  • 2 tbsp fresh parsley, chopped

  • 1 tbsp fresh rosemary, chopped

  • ½ tsp salt

  • ½ tsp cracked black pepper

For Finishing:

  • 1 egg, beaten (for egg wash)

  • Extra parmesan and herbs for topping (optional)


Instructions

  1. In a bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.

  2. Add olive oil, salt, and flour. Mix to form a shaggy dough. Knead by hand or mixer for 8–10 minutes until smooth.

  3. Transfer dough to a greased bowl, cover, and let rise 1–1.5 hours until doubled.

  4. Meanwhile, mix all filling ingredients in a small bowl. Set aside.

  5. Punch down dough and roll into a 10×14-inch rectangle. Spread filling evenly.

  6. Roll into a log from the long side. Slice the log lengthwise and twist the two halves together, cut sides facing up. Shape into a spiral or braid.

  7. Place on a parchment-lined baking sheet. Cover and let rise for 30 minutes.

  8. Preheat oven to 375°F (190°C). Brush loaf with beaten egg and sprinkle with extra cheese or herbs if desired.

  9. Bake for 25–30 minutes until golden brown and cooked through.

  10. Let cool 10 minutes before slicing and serving.
