  • 56 Roma tomatoes, diced (or about 2½ cups of chopped tomatoes)

  • ¼ cup chopped fresh basil

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon balsamic vinegar

  • 1 clove garlic, finely minced or grated

  • ½ teaspoon salt (or to taste)

  • ¼ teaspoon freshly ground black pepper

  • Optional: ¼ cup finely chopped red onion for extra bite

  • Optional: Shredded Parmesan cheese or mozzarella for garnish


Instructions

Start by washing and drying your tomatoes thoroughly. Roma tomatoes are ideal because they’re less watery and hold their shape well, but cherry tomatoes or heirloom varieties can also be used. Dice the tomatoes into small, even pieces and place them in a medium mixing bowl.

Next, add the chopped basil, minced garlic, salt, and pepper. If you’re using red onion, add that now too. Drizzle in the olive oil and balsamic vinegar, and gently stir the mixture until everything is well combined. Taste and adjust the seasoning, adding more salt, pepper, or vinegar if needed. Keep in mind that the flavors will develop as the dip sits.

Cover the bowl and refrigerate the bruschetta dip for at least 15–30 minutes before serving. This resting time allows the tomatoes to marinate and the flavors to meld. When ready to serve, transfer the mixture to a serving bowl and garnish with fresh basil leaves or a sprinkle of shredded cheese if desired.

 

Serve chilled or at room temperature with toasted baguette slices, crostini, pita chips, or even fresh vegetable sticks. The dip is best enjoyed within 1–2 days, although it can last a bit longer if stored properly.

Notes

One common mistake is using overripe or bland tomatoes. Since they’re the main ingredient, bland tomatoes will result in a flavorless dip. Always taste your tomatoes before making the recipe. Another error is chopping the ingredients too large, which can make the dip difficult to scoop and eat. Keep everything finely diced for the best consistency.

 

Using too much garlic or balsamic vinegar can also overwhelm the other ingredients. A little goes a long way, especially when the dip is allowed to rest and develop flavor. Finally, avoid skipping the resting period. Even 15 minutes in the fridge makes a big difference in how the flavors come together.
