Ingredients
4–5 medium ripe tomatoes (roma, heirloom, or vine-ripened work well)
1/4 cup red wine vinegar or apple cider vinegar
1/3 cup extra virgin olive oil
3 cloves garlic, minced
1/4 teaspoon sea salt (adjust to taste)
1/4 teaspoon freshly ground black pepper
1 teaspoon dried oregano or Italian seasoning
2 tablespoons fresh basil, chopped (or parsley for variation)
Optional: a pinch of sugar to balance acidity
Optional: thinly sliced red onions or shallots for extra tang
Instructions
Start by preparing your tomatoes. Wash them thoroughly, then slice them into even rounds or wedges, depending on your preference. If using cherry or grape tomatoes, simply halve them. Place the sliced tomatoes into a large mixing bowl.
Next, prepare the marinade. In a small bowl or measuring cup, whisk together the olive oil, vinegar, minced garlic, oregano, salt, pepper, and optional sugar. If using fresh herbs like basil or parsley, add them in as well. Stir until the dressing is well combined.
Pour the marinade over the sliced tomatoes and gently toss everything together to ensure all the pieces are evenly coated. If you’re using red onions or shallots, now is the time to add them. Let the tomatoes sit at room temperature for 20 to 30 minutes before serving to allow the flavors to blend.
For best results, cover and refrigerate the tomatoes for at least 1 hour—or up to 24 hours—for a deeper, more developed flavor. Stir occasionally to redistribute the marinade, and serve chilled or at room temperature as desired.

Although this recipe is easy, there are a few pitfalls to be aware of. First, avoid using under-ripe or overly soft tomatoes, as they either lack flavor or break down too quickly. Choose tomatoes that are firm yet fragrant.
Second, don’t drown the tomatoes in too much marinade. You want enough to coat them well and develop flavor, but not so much that they become soggy. Stir gently to avoid bruising the tomato slices and preserve their shape.
Another common mistake is skipping the resting time. Letting the tomatoes marinate for at least 20 minutes (and ideally a few hours) helps the flavors develop fully. It also gives the acidity time to slightly soften the tomato flesh, which makes the dish more cohesive and flavorful.
