French Toast Roll-Ups – Sweet, Crispy & Irresistible!

Description

These French Toast Roll-Ups are crispy, stuffed with delicious fillings, and coated in cinnamon sugar! Perfect for breakfast or brunch.


Ingredients

For the Roll-Ups:

  • 8 slices white sandwich bread (or brioche)
  • 2 tablespoons butter (for cooking)

For the Egg Mixture:

  • 2 large eggs
  • ¼ cup (60ml) milk
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon

For the Cinnamon Sugar Coating:

  • ¼ cup (50g) granulated sugar
  • 1 teaspoon ground cinnamon

Filling Options:

  • Nutella & banana – ¼ cup Nutella + 1 small banana, sliced
  • Strawberries & cream cheese – ¼ cup cream cheese + ¼ cup diced strawberries
  • Peanut butter & jelly – ¼ cup peanut butter + 2 tablespoons jam
  • Apple cinnamon – ¼ cup apple pie filling + dash of cinnamon

Instructions

1. Prepare the Bread

  1. Trim the crusts off each slice of bread.
  2. Use a rolling pin to flatten each slice into a thin sheet.

2. Fill & Roll the Bread

  1. Spread your filling of choice onto one side of each slice.
  2. Roll the bread tightly into a log, sealing the edge with a little pressure.

3. Make the Egg Mixture

  1. In a bowl, whisk together eggs, milk, vanilla extract, and cinnamon.

4. Coat & Cook the Roll-Ups

  1. Heat butter in a skillet over medium heat.
  2. Dip each roll-up into the egg mixture, coating evenly.
  3. Place roll-ups in the pan and cook for 2-3 minutes per side, turning until golden brown.

5. Coat in Cinnamon Sugar

  1. Mix sugar and cinnamon in a shallow bowl.
  2. Roll warm French toast roll-ups in the mixture until coated.

6. Serve & Enjoy!

  1. Serve immediately with maple syrup, fresh fruit, or whipped cream.
  2. Enjoy while warm and crispy!

Notes

Use soft bread – It rolls easier and holds fillings better.
Don’t overfill – Too much filling can cause the roll-ups to burst.
Cook on medium heat – Prevents burning while ensuring a crispy exterior.
