Ingredients
6 medium Yukon Gold or Russet potatoes, thinly sliced or cubed
1 tablespoon olive oil
1 large yellow onion, thinly sliced
1 can (10.5 oz) condensed French onion soup
1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
½ teaspoon garlic powder
Salt and pepper to taste
1½ cups shredded Gruyère, Swiss, or mozzarella cheese
¼ cup grated Parmesan cheese
Optional: chopped parsley for garnish
Instructions
Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
In a skillet, heat olive oil over medium. Add onions and cook 15–20 minutes until golden and caramelized.
Meanwhile, slice or cube potatoes. Place in a bowl and season with garlic powder, thyme, salt, and pepper.
Add caramelized onions and French onion soup to the potatoes. Toss to coat.
Transfer mixture to baking dish. Cover with foil and bake for 40 minutes until potatoes are tender.
Remove foil and top with shredded cheese and Parmesan. Bake uncovered 15 minutes until cheese is golden.
Let rest for 5 minutes before serving. Garnish with chopped parsley if desired.

Caramelizing the onions enhances the depth of flavor—don’t skip this step.
Use Gruyère for the most classic French onion flavor, but mozzarella works in a pinch.
To save time, prep the dish ahead and refrigerate until ready to bake.
