Cozy and Delicious Easy Manicotti Recipe for Italian Nights

  • Author: Elisa
  • Total Time: 1 hour
  • Yield: 6 servings 1x

Description

This easy manicotti recipe delivers creamy stuffed pasta shells smothered in rich marinara sauce and topped with gooey cheese. It’s a one-pan, comforting Italian dinner that’s perfect for cozy nights, casual gatherings, or meal prep. Inspired by the Cozy Cook, this dish is simple, hearty, and family-friendly.

Ingredients

Scale

For the Cheese Filling:

  • 15 oz (425g) ricotta cheese

  • 1½ cups (170g) shredded mozzarella cheese

  • ½ cup (50g) grated parmesan cheese

  • 1 large egg

  • 2 cloves garlic, minced

  • 1 tsp dried basil

  • ½ tsp dried oregano

  • ½ tsp salt

  • ¼ tsp black pepper

For the Dish:

  • 1 box (8 oz or 225g) manicotti pasta shells (about 14 shells)

  • 3 cups (720ml) marinara sauce (store-bought or homemade)

  • 1 cup (115g) shredded mozzarella (for topping)

  • Optional: fresh parsley or basil for garnish

Instructions

  • Boil manicotti shells in salted water until just under al dente, about 1–2 minutes less than package directions. Drain and cool slightly.

  • In a large bowl, mix ricotta, mozzarella, parmesan, egg, garlic, basil, oregano, salt, and pepper until well combined.

  • Transfer cheese filling to a piping bag or zip-top bag. Snip the corner and fill each manicotti shell from both ends.

  • Spread 1 cup of marinara sauce into a 9×13 inch baking dish. Arrange filled shells in a single layer.

  • Pour remaining marinara over the shells and sprinkle with 1 cup of mozzarella.

  • Cover tightly with foil and bake at 375°F (190°C) for 30 minutes. Remove foil and bake 10–15 minutes more until bubbly and golden.

  • Let rest 5–10 minutes before serving. Garnish with parsley or basil if desired.

Notes

Use a zip-top or pastry bag for easy, mess-free stuffing.

Avoid overcooking the pasta—slightly firm shells are easier to fill.

You can prep the dish ahead and refrigerate or freeze before baking.

Add spinach, sausage, or swap marinara for Alfredo for variations.

Always cover the dish during baking to prevent dried-out pasta.
