  • 1/3 cup mayonnaise

  • 1/4 teaspoon hot sauce
  • 2 tablespoons dehydrated potato flakes (for thickness)
  • 1 red Fresno chili pepper, minced
  • 1 yellow bell pepper, cut into small stars
  • Parmesan cheese, grated (for garnish)

Instructions

  1. Boil the Eggs: Bring a pot of water to a boil and cook eggs for 9½ minutes. Transfer to an ice bath to cool, then peel carefully.
  2. Prepare the Whites: Slice eggs in half horizontally. Trim bottoms so they stand upright without tipping.
  3. Sauté the Spinach: Melt butter in a skillet, sauté garlic until fragrant, then add spinach and cook until wilted. Let cool completely.
  4. Make the Filling: In a food processor, blend spinach, garlic, egg yolks, mayo, mustard, lemon juice, paprika, hot sauce, and potato flakes until smooth. Chill 15 minutes to firm up.
  5. Assemble the Trees: Pipe filling into egg whites in a spiral to form tree shapes. Decorate with minced red pepper “ornaments” and yellow pepper “stars.”
  6. Finish: Grate Parmesan over the top for a snowy look and chill until ready to serve.
