These cheesy mashed potato puffs are crispy on the outside and cheesy on the inside. A perfect comfort food snack or side dish!
Ingredients
3 cups mashed potatoes (prepared ahead of time or freshly made)
1½ cups shredded cheddar cheese (or any cheese of your choice)
¼ cup grated Parmesan cheese
1 egg, beaten
¼ cup all-purpose flour
½ cup breadcrumbs (for coating)
2 tablespoons melted butter
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper to taste
Optional garnish:
Fresh parsley (chopped)
Extra shredded cheese (for topping)
Instructions
Preheat the oven: Start by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
Prepare the mashed potatoes: If you don’t already have mashed potatoes prepared, make them first. You can use leftover mashed potatoes from a previous meal, or cook up a fresh batch by boiling peeled and chopped potatoes until tender. Mash them with butter, milk, salt, and pepper to taste. Let them cool slightly before using them in the next steps.
Mix the ingredients: In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, beaten egg, garlic powder, onion powder, and a pinch of salt and pepper. Mix everything together until well incorporated. If the mixture feels too sticky, add a little more flour to help bind it.
Shape the puffs: Using your hands, scoop about 2 tablespoons of the mashed potato mixture and roll it into a ball or shape it into a small oval. Repeat the process until all the mixture is used up.
Coat the puffs: In a shallow bowl, pour the breadcrumbs. Gently roll each shaped puff in the breadcrumbs to coat the outside evenly.
Bake the puffs: Arrange the puffs on the prepared baking sheet and brush them lightly with melted butter. Bake in the preheated oven for 20–25 minutes, or until they are golden brown and crispy on the outside. You can also sprinkle a little extra cheese on top during the last 5 minutes of baking if you like extra cheesy puffs.
Serve: Once they are done, remove the puffs from the oven and allow them to cool slightly before serving. Garnish with fresh parsley for a touch of color and flavor.
Notes
Use fresh, fluffy mashed potatoes: For the best texture, make sure your mashed potatoes are smooth and not too runny. You want them to hold their shape when rolled into puffs. If your mashed potatoes are too thin, add a bit of extra flour to help bind them.
Season well: Don’t forget to season the mashed potatoes with salt and pepper to bring out the flavors. The cheeses will add richness, but you still need that base seasoning.
Use cold mashed potatoes: If you’re using freshly made mashed potatoes, allow them to cool slightly before mixing them with the other ingredients. This helps them firm up and prevents the egg from scrambling.
