Ingredients
For the sushi rice:
1 ½ cups sushi rice (short grain)
2 cups water
2 tablespoons rice vinegar
1 tablespoon granulated sugar
½ teaspoon salt
For the toppings:
1 ½ cups imitation crab meat (flaked or chopped)
1 avocado, diced
1 cup cucumber, peeled and diced
½ cup carrots, julienned (optional)
2 tablespoons mayonnaise (or Japanese mayo)
1 teaspoon sriracha (optional, for spicy mayo)
1 tablespoon soy sauce or coconut aminos
1 tablespoon sesame seeds
1 sheet nori (cut into thin strips or crumbled)
Pickled ginger and wasabi for garnish (optional)
Instructions
Cook the sushi rice. Rinse the sushi rice thoroughly under cold water until the water runs clear. This step removes excess starch and helps achieve the sticky, fluffy texture that defines sushi rice. Add the rinsed rice and water to a rice cooker or saucepan and cook according to package instructions. Once done, let the rice rest for 10 minutes.
Season the rice. While the rice is resting, combine rice vinegar, sugar, and salt in a small saucepan over low heat. Stir just until the sugar dissolves, then remove from heat. Gently fold the vinegar mixture into the warm rice with a spoon or rice paddle. Be careful not to mash the grains. Let the rice cool slightly while you prepare the other ingredients.
Prep the toppings. Chop or flake the imitation crab meat into bite-sized pieces. Dice the avocado and cucumber, and julienne the carrots if you’re including them. You can also mix the mayonnaise and sriracha in a small bowl to create a quick spicy mayo.
Assemble the bowls. Divide the sushi rice between serving bowls. Arrange the crab, avocado, cucumber, and any other toppings neatly on top. Drizzle with spicy mayo and soy sauce or coconut aminos. Sprinkle with sesame seeds and garnish with strips of nori, pickled ginger, and wasabi if desired.
Serve immediately. These bowls are best enjoyed fresh while the rice is slightly warm and the toppings are crisp and cool. Mix everything together before eating to distribute the flavors.

Despite being beginner-friendly, there are a few mistakes that can compromise your California Roll Sushi Bowls. First, avoid overcooking the rice or using the wrong type of rice. Long-grain or brown rice doesn’t have the sticky texture you need. Stick with short-grain sushi rice for the best results. Another mistake is not letting the rice cool slightly before adding toppings—hot rice can wilt your veggies and ruin the balance.
Also, be cautious not to overload your bowl with too many wet ingredients. This can make the rice soggy and cause the flavors to compete instead of complementing each other. And don’t forget to taste as you go. Since soy sauce and imitation crab are naturally salty, you may not need to add extra salt elsewhere.
