Ingredients

Scale

For the Cake:

  • 1 box white cake mix (plus ingredients listed on the box)
  • 1 teaspoon vanilla extract (optional, for extra flavor)

For the Pudding Filling:

  • 2 boxes (3.4 oz each) instant vanilla pudding mix
  • 4 cups (960ml) cold milk
  • Pastel food coloring (pink, yellow, blue, green, or purple)

For the Topping:

  • 8 oz (226g) whipped topping (Cool Whip), thawed
  • Easter sprinkles or pastel-colored M&M’s
  • Shredded coconut (optional, dyed green for a “grass” effect)

Instructions

1. Bake the Cake

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Prepare white cake mix according to package instructions, adding vanilla extract if desired.
  3. Pour batter into the prepared pan and bake as directed (usually 25-30 minutes).
  4. Let cake cool completely before proceeding.

2. Prepare the Pudding Filling

  1. In a bowl, whisk together pudding mix and cold milk until smooth.
  2. Divide pudding evenly into 3-4 separate bowls and tint each with pastel food coloring.

3. Poke & Fill the Cake

  1. Using the handle of a wooden spoon or a skewer, poke holes all over the cooled cake.
  2. Spoon colored pudding into the holes, alternating colors for a rainbow effect.
  3. Gently spread any remaining pudding across the top.

4. Add the Whipped Topping

  1. Spread whipped topping evenly over the cake.
  2. Decorate with Easter sprinkles, pastel M&M’s, or shredded coconut dyed green.

5. Chill & Serve!

  1. Refrigerate for at least 2 hours to allow flavors to meld.
  2. Slice and enjoy this fun, festive Easter dessert!

Notes

✔ Use a white cake base – Makes the pastel pudding colors pop!
✔ Let the cake cool completely – Prevents the pudding from melting.
✔ Chill before serving – Allows the flavors to blend beautifully.
