This Easter Chex Mix is a no-bake, sweet and crunchy snack made with white chocolate, sprinkles, and Cadbury Mini Eggs! Perfect for Easter!

- 4 cups Rice Chex cereal
- 2 cups pretzels (mini twists or sticks)
- 1 cup pastel M&M’s
- 1 cup Cadbury Mini Eggs, slightly crushed
- 12 oz (340g) white chocolate or candy melts
- 1 tablespoon coconut oil (optional, for smooth melting)
- ½ cup pastel-colored sprinkles
Instructions
1. Mix the Dry Ingredients
- In a large mixing bowl, combine Chex cereal, pretzels, M&M’s, and crushed Cadbury Mini Eggs.
2. Melt the White Chocolate
- In a microwave-safe bowl, melt white chocolate and coconut oil in 30-second intervals, stirring between each until smooth.
- Alternatively, use a double boiler over low heat to melt the chocolate.
3. Coat the Chex Mix
- Pour the melted white chocolate over the Chex mixture, tossing gently until evenly coated.
- Immediately sprinkle with pastel sprinkles while the chocolate is still wet.
4. Let It Set & Break Apart
- Spread the mixture onto a parchment-lined baking sheet in an even layer.
- Let sit at room temperature for 30 minutes, or refrigerate for 10-15 minutes until hardened.
- Once set, break into bite-sized clusters.
