These baked feta potatoes are creamy, crispy, and packed with flavor—perfect as a side or satisfying meatless main.
Ingredients
1.5 lbs baby or new potatoes, halved or quartered
1 block (200g) feta cheese
3 tablespoons olive oil
2–3 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon paprika
Salt and black pepper, to taste
Optional: fresh parsley or basil for garnish, chili flakes for a spicy kick
Instructions
Preheat the Oven
Preheat your oven to 400°F (200°C). This ensures a nice hot environment to help the potatoes get crispy on the outside while staying fluffy on the inside.Prepare the Potatoes
Wash and dry your potatoes. If using baby potatoes, simply halve them. For larger potatoes, cut into bite-sized chunks. Place them in a large bowl or directly in your baking dish.Season the Potatoes
Drizzle the olive oil over the potatoes, then add the garlic, oregano, paprika, salt, and pepper. Toss everything well to coat the potatoes evenly in oil and seasonings.Add the Feta
Nestle the block of feta cheese in the center of the pan, surrounded by the seasoned potatoes. If desired, drizzle a little more olive oil over the feta to help it roast nicely.Bake
Roast in the oven for 35–40 minutes, or until the potatoes are golden, crispy, and fork-tender, and the feta is golden on top and soft in the center.
Stir and Serve
Remove from the oven and use a spoon to gently mash the feta and stir it into the potatoes, coating them in the cheesy mixture. Garnish with fresh herbs and a pinch of chili flakes if using. Serve hot and enjoy.
Notes
Avoid using low-fat feta, as it doesn’t melt the same way and may dry out. Also, make sure to bake the dish uncovered—covering it can cause steam buildup and prevent the potatoes from crisping. Another mistake to avoid is not seasoning enough. Potatoes need a good amount of salt, especially when paired with feta, which is salty but not overpowering in large dishes.
Lastly, don’t skip the resting time. Letting the dish sit for a few minutes after coming out of the oven helps everything settle and makes it easier to stir and serve.
