Description

Try this zesty Avocado Lime Baked Chicken recipe—easy, healthy, and packed with bold flavor for every meal.

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts

  • 1 ripe avocado, peeled and pitted

  • ¼ cup avocado oil

  • 1 tablespoon lime juice (freshly squeezed)

  • ½ teaspoon ground cumin

  • ½ teaspoon garlic powder

  • ½ teaspoon sea salt

  • ¼ teaspoon black pepper

Instructions

  • Prepare the Marinade
Start by combining the ripe avocado, avocado oil, lime juice, cumin, garlic powder, salt, and black pepper in a blender or food processor. Blend until smooth and creamy. If your avocado is very ripe, this should only take about 30 seconds to 1 minute.

  • Coat the Chicken
Place the chicken breasts in a large bowl or directly into your baking dish. Pour the avocado-lime marinade over the top, using a spoon or spatula to coat each piece thoroughly. Make sure the chicken is completely covered for the most flavorful results.

  • Marinate (Optional but Recommended)
If you have the time, cover the chicken and refrigerate it for at least 30 minutes, or up to 2 hours. This allows the flavors to deeply penetrate the meat. However, if you’re in a rush, you can bake it right away and still get delicious results.

  • Bake the Chicken
Preheat your oven to 400°F (200°C). Place the marinated chicken in a single layer on a parchment-lined baking dish or pan. Bake uncovered for 22–25 minutes, or until the internal temperature reaches 165°F (74°C) at the thickest part.

  • Rest and Serve
Once baked, let the chicken rest for 5 minutes before slicing. This step is crucial, as it helps retain the juices and keeps the chicken moist.

Notes

Overcooking is the number one mistake. Always monitor your chicken closely, especially if your pieces are thinner or smaller. Another common error is not seasoning enough—make sure your marinade is flavorful and that you coat the chicken well. Lastly, skipping the resting time will rob your dish of the juicy texture you worked so hard to create.
