Description

Enjoy an easy Hash Brown Egg Casserole recipe that’s cheesy, savory, and perfect for family breakfasts or brunch!

Ingredients

Scale
  • 20 ounces frozen shredded hash browns, thawed

  • 8 large eggs

  • 1 1/3 cups milk (preferably whole milk)

  • 1 1/2 cups shredded sharp cheddar cheese

  • 1 cup cooked breakfast sausage or diced cooked chicken

  • 1/2 cup diced onion

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Cooking spray or butter for greasing

Instructions

To start, preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with butter or cooking spray to prevent sticking.

Next, in a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper until fully combined and slightly frothy. This step is crucial because it ensures a light and airy texture in your final casserole.

Now, add the thawed hash browns, cooked sausage or chicken, diced onion, and shredded cheddar cheese into the bowl. Stir gently to evenly coat all the ingredients with the egg mixture.

Pour the entire mixture into your prepared baking dish, spreading it out into an even layer with a spatula.

Bake uncovered for 45–55 minutes, or until the center is set and the top is golden brown. It’s important to let the casserole rest for about 5–10 minutes after removing it from the oven before slicing. This allows the casserole to firm up slightly and makes serving much easier.

Notes

One common mistake is using frozen hash browns straight from the freezer. Always make sure they are completely thawed and drained to avoid a watery casserole.

Another mistake is overbaking. Although you want a golden top, baking the casserole for too long can dry it out and create an unpleasant texture.

Moreover, under-seasoning is a frequent error. Because potatoes and eggs are relatively mild in flavor, seasoning the mixture well with salt, pepper, and spices is absolutely key to a delicious result.
