Description

  • These Croissant Breakfast Sandwiches are flaky, cheesy, and perfect for meal prep! A delicious, easy breakfast ready in minutes.

For the Sandwiches:

  • 4 large croissants, sliced in half
  • 4 large eggs
  • ¼ cup (60ml) milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ tablespoon butter (for cooking eggs)
  • 4 slices cheese (cheddar, Swiss, or American)
  • 4 slices cooked bacon (or 4 sausage patties or deli ham)

Optional Add-Ins:

 

  • ½ avocado, sliced
  • ¼ cup sautéed spinach or mushrooms
  • 1 tablespoon Dijon mustard or hot sauce

Instructions

1. Prep the Croissants

  1. Preheat oven to 350°F (175°C).
  2. Slice croissants in half and place them cut-side up on a baking sheet.
  3. Toast in the oven for 5 minutes until warm and slightly crispy.

2. Cook the Eggs

  1. In a mixing bowl, whisk together eggs, milk, salt, and black pepper.
  2. Melt butter in a nonstick skillet over medium heat.
  3. Pour in the eggs and scramble gently, stirring until just set (about 3-4 minutes).
  4. Remove from heat and set aside.

3. Assemble the Sandwiches

  1. Layer each croissant with a slice of cheese, a scoop of scrambled eggs, and a slice of bacon (or sausage/ham).
  2. Add any optional toppings like avocado, spinach, or mustard.

4. Serve or Store for Later

 

  • Serve immediately while warm, or wrap in foil for easy transport.
