For the Sandwiches:
- 4 large croissants, sliced in half
- 4 large eggs
- ¼ cup (60ml) milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ tablespoon butter (for cooking eggs)
- 4 slices cheese (cheddar, Swiss, or American)
- 4 slices cooked bacon (or 4 sausage patties or deli ham)
Optional Add-Ins:
- ½ avocado, sliced
- ¼ cup sautéed spinach or mushrooms
- 1 tablespoon Dijon mustard or hot sauce
Instructions
1. Prep the Croissants
- Preheat oven to 350°F (175°C).
- Slice croissants in half and place them cut-side up on a baking sheet.
- Toast in the oven for 5 minutes until warm and slightly crispy.
2. Cook the Eggs
- In a mixing bowl, whisk together eggs, milk, salt, and black pepper.
- Melt butter in a nonstick skillet over medium heat.
- Pour in the eggs and scramble gently, stirring until just set (about 3-4 minutes).
- Remove from heat and set aside.
3. Assemble the Sandwiches
- Layer each croissant with a slice of cheese, a scoop of scrambled eggs, and a slice of bacon (or sausage/ham).
- Add any optional toppings like avocado, spinach, or mustard.
4. Serve or Store for Later
- Serve immediately while warm, or wrap in foil for easy transport.
