Ingredients
1.5 to 2 pounds (680g to 900g) boneless, skinless chicken breasts or thighs
¾ cup (190g) creamy peanut butter
⅓ cup (80ml) low-sodium soy sauce
2 tablespoons rice vinegar (or lime juice)
1 tablespoon sesame oil
2 tablespoons honey
2 tablespoons brown sugar
1 tablespoon grated fresh ginger (or 1 tsp ground ginger)
3 cloves garlic, minced
1 tablespoon Sriracha or chili garlic sauce (adjust to taste)
½ cup (120ml) chicken broth or water
1 medium red bell pepper, sliced
1 medium yellow onion, sliced
Optional garnish: chopped green onions, crushed peanuts, fresh cilantro, lime wedges
Instructions
To begin, lightly grease the inside of your crockpot to prevent sticking. Place the chicken breasts or thighs at the bottom of the slow cooker in a single layer.
Next, in a separate bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey, brown sugar, ginger, garlic, chili sauce, and chicken broth until smooth. If you’re short on time, you can pour the ingredients directly into the crockpot and mix there, though pre-mixing ensures a smoother sauce.
Pour the peanut sauce mixture over the chicken, making sure it’s evenly distributed. Add the sliced bell pepper and onion on top. These will soften beautifully as the dish cooks and add both flavor and texture.
Cover the crockpot and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is fully cooked and easily shredded with a fork. Once done, shred the chicken directly in the pot, then stir everything together so the sauce fully coats the chicken.
Taste and adjust the seasoning if needed—add more soy sauce for salt, honey for sweetness, or chili sauce for extra heat.
Notes
Using natural peanut butter without mixing. The oil separation can cause an uneven texture in the sauce.
Cooking on high too long. This can lead to dry chicken—stick to the recommended times.
Skipping the acidity. Without rice vinegar or lime juice, the flavor may be overly rich and flat.
Forgetting to stir. Once the chicken is shredded, mix it well so every bite is coated in sauce.
