  • 3 pounds boneless, skinless chicken thighs, trimmed
  • 1 cup light brown sugar
  • 1 cup soy sauce
  • ⅓ cup bourbon
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon ground ginger
  • 1 tablespoon honey
  • ½ teaspoon red pepper flakes
  • 4 cloves garlic, minced
  • 3 tablespoons cornstarch
  • 2 tablespoons water
  • ¼ cup chopped green onions, for garnish

For serving: white rice, brown rice, or cauliflower rice


Instructions

  1. Arrange chicken thighs in a single layer at the bottom of your crock pot.
  2. In a medium bowl, whisk together brown sugar, soy sauce, bourbon, apple cider vinegar, ginger, honey, red pepper flakes, and garlic. Pour sauce over chicken.
  3. Cover and cook on high for 4 hours or low for 6 hours, until chicken is cooked through and tender.
  4. Remove chicken and shred with two forks. In a small bowl, mix cornstarch and water into a slurry.
  5. Stir slurry into sauce in crock pot. Return shredded chicken to pot and cook for another 5–10 minutes until sauce thickens and coats chicken.
  6. Garnish with chopped green onions and serve hot over rice.

Notes

  • Trim excess fat from chicken thighs for a cleaner sauce.
  • For more heat, add extra red pepper flakes or a dash of hot sauce.
  • To make non-alcoholic, substitute bourbon with apple juice.
  • Thicken sauce at the end with cornstarch slurry for the perfect sticky glaze.
