- 3 pounds boneless, skinless chicken thighs, trimmed
- 1 cup light brown sugar
- 1 cup soy sauce
- ⅓ cup bourbon
- 2 tablespoons apple cider vinegar
- ½ teaspoon ground ginger
- 1 tablespoon honey
- ½ teaspoon red pepper flakes
- 4 cloves garlic, minced
- 3 tablespoons cornstarch
- 2 tablespoons water
- ¼ cup chopped green onions, for garnish
For serving: white rice, brown rice, or cauliflower rice
Instructions
- Arrange chicken thighs in a single layer at the bottom of your crock pot.
- In a medium bowl, whisk together brown sugar, soy sauce, bourbon, apple cider vinegar, ginger, honey, red pepper flakes, and garlic. Pour sauce over chicken.
- Cover and cook on high for 4 hours or low for 6 hours, until chicken is cooked through and tender.
- Remove chicken and shred with two forks. In a small bowl, mix cornstarch and water into a slurry.
- Stir slurry into sauce in crock pot. Return shredded chicken to pot and cook for another 5–10 minutes until sauce thickens and coats chicken.
- Garnish with chopped green onions and serve hot over rice.
Notes
- Trim excess fat from chicken thighs for a cleaner sauce.
- For more heat, add extra red pepper flakes or a dash of hot sauce.
- To make non-alcoholic, substitute bourbon with apple juice.
- Thicken sauce at the end with cornstarch slurry for the perfect sticky glaze.
