Description

These crispy baked zucchini tots are a healthy, cheesy, veggie-packed snack or side dish — golden on the outside, tender inside, and perfect for dipping!


Ingredients

  • 2 cups zucchini, grated (about 2 medium zucchinis)
  • 1 large egg
  • ½ cup shredded cheddar cheese
  • ½ cup panko breadcrumbs
  • 1 tsp Italian seasoning
  • ¼ tsp onion powder
  • Salt and pepper, to taste
  • Ketchup or dipping sauce, for serving

Instructions

  1. Preheat oven: Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Prep zucchini: Grate zucchini and squeeze out excess liquid with a towel. You should have ~1 cup packed.
  3. Mix: In a bowl, combine zucchini, egg, cheese, breadcrumbs, seasoning, onion powder, salt & pepper. Mix well.
  4. Shape: Scoop ~1 tablespoon of mixture and shape into oval tots. Repeat with remaining mixture.
  5. Bake: Arrange on baking sheet and bake 25–30 minutes, turning halfway, until golden and crispy.
  6. Serve: Serve warm with your favorite dipping sauce.

Notes

  • Squeeze zucchini thoroughly to avoid soggy tots.
  • Flip halfway through baking for even browning.
