Instructions
- Prepare the fries – If using frozen fries, preheat the oven to 425°F (220°C) and spread them on a baking sheet. Toss with olive oil, Creole seasoning, paprika, garlic powder, salt, and pepper. Bake for 20-25 minutes, flipping halfway through, until crispy and golden brown. Alternatively, air fry at 400°F (200°C) for 15 minutes, shaking the basket halfway.
- Make the cheese sauce – In a small saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute. Gradually whisk in the milk, stirring constantly until smooth. Add shredded cheddar and pepper jack cheese, along with Creole seasoning and cayenne pepper. Stir until the cheese is fully melted and the sauce is thick and creamy. Remove from heat.
- Assemble the fries – Arrange the crispy fries on a serving platter or in a bowl. Pour the warm cheese sauce generously over the fries.
- Add the toppings – Sprinkle crumbled bacon, diced green onions, and jalapeños over the top. Drizzle with sour cream or ranch dressing, and finish with a splash of hot sauce if desired.

- Use Fresh or Frozen Fries – While frozen fries are convenient, homemade fries using russet or Yukon Gold potatoes will give the best texture and flavor. Cut them into thin strips for extra crispiness.
- Double Fry for Extra Crunch – If making fresh fries, fry them twice—once at 325°F (165°C) to cook them through, and again at 375°F (190°C) to get them golden and crispy.
