- 1 tablespoon olive oil
- 12 oz (340g) smoked sausage, sliced into rounds
- ½ cup (1 small) onion, diced
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- ½ teaspoon red pepper flakes (optional, for heat)
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 ½ cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 2 tablespoons cream cheese (for extra creaminess)
- 1 tablespoon Dijon mustard (optional, for depth of flavor)
For Garnishing (Optional):
- Fresh parsley, chopped
- Extra Parmesan cheese
- Crushed red pepper flakes
Instructions
1. Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the pasta according to package instructions until al dente.
- Drain and set aside.
2. Sauté the Smoked Sausage
- In a large skillet or Dutch oven, heat olive oil over medium-high heat.
- Add the sliced smoked sausage and cook for 4-5 minutes, stirring occasionally, until browned.
- Remove the sausage and set aside.
3. Sauté Aromatics & Build Flavor
- In the same skillet, add diced onion and cook for 2 minutes, until softened.
- Stir in minced garlic, smoked paprika, and red pepper flakes, cooking for 30 seconds until fragrant.
4. Make the Creamy Sauce
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits.
- Stir in the heavy cream, Dijon mustard (if using), and cream cheese, whisking until smooth.
- Reduce heat to low and add shredded cheddar and Parmesan cheese, stirring until melted.
5. Combine Everything & Serve
- Add the cooked pasta and browned sausage back to the skillet.
- Stir well, ensuring everything is evenly coated in the creamy sauce.
- Taste and adjust seasoning with salt and black pepper if needed.
6. Garnish & Enjoy!
- Sprinkle with fresh parsley, extra Parmesan, and crushed red pepper flakes.
