  • 2 cups cooked shredded chicken (rotisserie or leftover chicken)
  • 1 lb (450g) potato gnocchi
  • 4 slices bacon, cooked and crumbled
  • 1 tablespoon olive oil or butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon black pepper

For the Creamy Sauce:

  • 1 cup (240ml) heavy cream (or half-and-half)
  • ½ cup (120ml) chicken broth
  • ½ cup (120g) cream cheese, softened
  • ½ cup shredded cheddar cheese
  • 1 teaspoon ranch seasoning mix
  • ½ teaspoon red pepper flakes (optional, for spice)

For Garnishing (Optional):

  • ¼ cup fresh parsley or green onions, chopped
  • Extra shredded cheese
  • Cracked black pepper

Instructions

1. Cook the Bacon & Gnocchi

  1. In a large skillet, cook bacon over medium heat until crispy. Remove, drain on paper towels, and crumble.
  2. In the same skillet, heat olive oil or butter over medium heat.
  3. Add gnocchi and sauté for 2-3 minutes, stirring occasionally, until lightly golden. Remove and set aside.

2. Make the Creamy Sauce

  1. In the skillet, add chicken broth, heavy cream, and cream cheese. Stir until smooth.
  2. Mix in cheddar cheese, ranch seasoning, garlic powder, onion powder, paprika, and black pepper.
  3. Simmer for 3-5 minutes, stirring occasionally, until thickened.

3. Assemble the Dish

  1. Stir in shredded chicken and crispy bacon, coating well in the sauce.
  2. Add the sautéed gnocchi and toss to combine.
  3. Let cook for another 2-3 minutes until everything is warmed through.

4. Serve & Enjoy!

  • Garnish with fresh parsley or green onions.

Notes

Use fresh or shelf-stable gnocchi – Fresh gnocchi cooks faster and has a softer texture.
