For the Chicken & Gnocchi:
- 2 cups cooked shredded chicken (rotisserie or leftover chicken)
- 1 lb (450g) potato gnocchi
- 4 slices bacon, cooked and crumbled
- 1 tablespoon olive oil or butter
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon black pepper
For the Creamy Sauce:
- 1 cup (240ml) heavy cream (or half-and-half)
- ½ cup (120ml) chicken broth
- ½ cup (120g) cream cheese, softened
- ½ cup shredded cheddar cheese
- 1 teaspoon ranch seasoning mix
- ½ teaspoon red pepper flakes (optional, for spice)
For Garnishing (Optional):
- ¼ cup fresh parsley or green onions, chopped
- Extra shredded cheese
- Cracked black pepper
Instructions
1. Cook the Bacon & Gnocchi
- In a large skillet, cook bacon over medium heat until crispy. Remove, drain on paper towels, and crumble.
- In the same skillet, heat olive oil or butter over medium heat.
- Add gnocchi and sauté for 2-3 minutes, stirring occasionally, until lightly golden. Remove and set aside.
2. Make the Creamy Sauce
- In the skillet, add chicken broth, heavy cream, and cream cheese. Stir until smooth.
- Mix in cheddar cheese, ranch seasoning, garlic powder, onion powder, paprika, and black pepper.
- Simmer for 3-5 minutes, stirring occasionally, until thickened.
3. Assemble the Dish
- Stir in shredded chicken and crispy bacon, coating well in the sauce.
- Add the sautéed gnocchi and toss to combine.
- Let cook for another 2-3 minutes until everything is warmed through.
4. Serve & Enjoy!
- Garnish with fresh parsley or green onions.
